Most likely all those pictures were created using Adobe Illustrator CS3-CS5. They were most likely vector illustrations, which means they can be sized to basically any size without losing quality...aka clipart.

Oh yeh... this is Adobe Illustrator, simple as that. The latest version is CS5 but all of the other versions will work also.
